Ingredients

olive oil

onion - diced

large carrots - chopped

medium sweet potatoes - chopped into small chunks

red bell pepper - diced

can diced tomatoes

garlic powder

tablespoon
red curry powder

teaspoon
garam masala

water

can coconut milk
rice to curry serve over
Instructions
Add olive oil to a large pan, followed by onions, carrots, sweet potatoes, and bell peppers.
Saute on medium-high heat until onions and other vegetables brown slightly.
Add diced tomatoes, salt, pepper, garlic powder, curry powder and garam masala and stir.
Add water, coconut milk and bring mixture to a boil then reduce to a medium simmer.
Simmer for 15 minutes, stirring occasionally.
Serve chunky over rice or blend the mixture curry with an immersion blender for a smoother curry.
