Sweet Potato Curry

Ingredients

  • 2 tablespoons olive oil
  • 1 onion - diced
  • 3 large carrots - chopped
  • 2 medium sweet potatoes - chopped into small chunks
  • 1 red bell pepper - diced
  • 1- 14.5 ounce can diced tomatoes
  • 1-1/2 teaspoons salt
  • 1/2 tsp black pepper
  • 1/2 tsp garlic powder
  • 1 tablespoon red curry powder
  • 1 teaspoon garam masala
  • 3 cups water
  • 1 can coconut milk
  • rice to curry serve over

Instructions

  • Add olive oil to a large pan, followed by onions, carrots, sweet potatoes, and bell peppers.
  • Saute on medium-high heat until onions and other vegetables brown slightly.
  • Add diced tomatoes, salt, pepper, garlic powder, curry powder and garam masala and stir.
  • Add water, coconut milk and bring mixture to a boil then reduce to a medium simmer.
  • Simmer for 15 minutes, stirring occasionally.
  • Serve chunky over rice or blend the mixture curry with an immersion blender for a smoother curry.
