Sugar Snap Pea and Lemon Salata

Ingredients

  • 1 1/2 cups sugar snap peas
  • 1/2 teaspoon lemon zest
  • 1 teaspoon lemon juice
  • 2 tablespoons parmesan cheese - grated or ground
  • pinch of fresh black pepper
  • pinch of salt
  • 1 teaspoons red wine vinegar or vinegar of choice
  • 2 teaspoons olive oil
  • pinch of sugar

Instructions

  • Chop your sugar snap peas and add to a bowl, add your lemon zest, lemon juice, parmesan cheese, black pepper and salt together and give it a good stir.
  • Whisk together the red wine vinegar, olive and sugar together and then pour over the top and stir quickly again.
  • Serve chilled, enjoy!
