Steak and Vegetable Skewers

These steak and vegetable skewers are a classic staple of summer grilling at my house. Flavorful marinated steak with grilled vegetables.

Ingredients

  • 2 pounds London broil - cut into bite size pieces
  • 1/4 cup Worcestershire sauce
  • 1 tablespoon Dijon mustard
  • 1/4 cup soy sauce
  • 2 tablespoon sugar
  • 1 1/2 teaspoons salt
  • 1/2 teaspoon black pepper
  • 1 tablespoon garlic powder

For vegetables:

  • Red onions
  • zucchini
  • Bell peppers
  • Mushrooms
  • Eggplant - Optional
  • Olive oil for vegetables
  • Salt and pepper for vegetables

Instructions

  • In a large container or zip lock bag, add the steak, Worcestershire sauce, Dijon mustard, soy sauce, sugar, salt, black pepper and garlic powder, mix around until the steak is well coated and then refrigerate for at least 30 minutes, preferably a few hours.
  • Toss vegetables in a little olive oil and season with salt and pepper.
  • Skewer steak either on it's own or with vegetables in between.
  • Grill on 400 F. until steak and vegetables are at desired cook.
