Steak and Pepper Salad

Steak, sweet bell peppers, avocado, feta, tomatoes, almonds and cilantro vinegarette come together in this savory and completely delicious salad!

Ingredients

  • Large handful of spring mix
  • 3 Mini bell peppers -sliced
  • 5 Cherry tomatoes - sliced in half
  • Sprinkle of slivered almonds
  • Fresh cilantro to preference
  • Crumble of feta to preference
  • Fresh cracked black pepper
  • 1/2 Avocado
  • 1/3 pound Steak Cooked to preference

For the dressing:

  • 1 teaspoon Cilantro minced
  • 1 teaspoon Green onion diced
  • 1/4 teaspoon Dijon mustard
  • 2 tablespoons Red wine vinegar
  • 1 teaspoon Orange juice
  • 2 tablespoons Grape seed or flavor neutral oil
  • 1 teaspoon Honey
  • Pinch Salt & pepper

Instructions

  • Add all salad ingredients to a large bowl.
  • Whisk together all of the dressing ingredients.
  • Top salad with dressing and enjoy.
