Smoked Salmon Southwest Salad

Smoked salmon is the star of this delicious southwest salad with a cilantro vinaigrette.

Ingredients

  • 4 handfuls lettuce - chopped
  • 1 cup corn
  • 1/2 cup cilantro
  • 1/2 cup feta crumbled
  • 1/2 cup tomatoes
  • 1 green onion - diced
  • 3 tablespoons crispy jalapenos
  • 2 tablespoons pepitas
  • 3/4 cup smoked salmon

For the cilantro vinaigrette:

  • 1 cup cilantro
  • 2 cloves garlic
  • 1 tablespoon mustard
  • 1 1/2 teaspoons sugar
  • 1 teaspoon salt
  • 1/4 cup oil
  • 1/4 cup white vinegar

Instructions

  • Add all of the salad ingredients into a serving dish.
  • To make the dressing, add all of the ingredients into a blender and or food processor and blend together until smooth, If you don't have a blender, you can finely mince the cilantro and garlic and whisk dressing together.
  • Dress with desired amount of dressing and enjoy!
