Pumpkin Gnocchi

Ingredients

  • 1 1/2 Cups pumpkin puree
  • 1 teaspoon Salt
  • 4 Cups Flour
  • 2 Eggs

Instructions

  • Mix all ingredients together in a mixing bowl. Roll out into long skinny tubes and cut into 1 inch sections. If you have a gnocci board roll on that for the little ridges. If you are like me and don't have one,  then use the back of a fork to roll each piece to create ridges. Boil in salted water for 2-3 minutes. If you want them crispy, after boiling place into a pan with some butter and cook until they get golden and slightly crispy. Enjoy!
