Low Carb and Dairy Free Hot Chocolate

Ingredients

water

cup
milk of choice - coconut
almond, soy, oat, etc.

cup
cacao powder
1
teaspoon
cornstarch
1
tablespoon
water
1
tablespoon
vanilla extract
1
cup
monk fruit sweetener
pinch
of salt
(optiona1/4 teaspoon coconut oil or ghee- this makes it really decadent but isn't a necessity
Instructions
In a heavy bottomed pot add water, milk of choice, cacao powder and bring to a boil.
While mixture is coming to a boil then mix together the cornstarch and water in a small bowl.
Whisk in the cornstarch and water and boil for 1 minute then reduce to a simmer.
Add vanilla extract, monk fruit sweetener and pinch of salt and stir.
Let it cool to a drinkable temperature and enjoy!
