Lemon Pepper Salmon Salad Sandwiches

This salmon salad has lemon, pepper, dill, capers, celery and parsley in a creamy sauce.

Ingredients

  • 1 pound salmon - cooked cooled (canned or baked works great)
  • 1 stalk celery - finely diced
  • 1 green onion - finely diced
  • 1 tablespoon capers
  • 1 tablespoon fresh parsley or 1 teaspoon dried - minced
  • 1 tablespoon fresh dill or 1 teaspoon dried dill - minced
  • 1 teaspoon lemon pepper seasoning
  • dash of salt
  • Pinch of sugar
  • dash cayenne pepper
  • zest of 1 lemon - optional
  • 2 tablespoons lemon juice
  • 3 tablespoons mayonnaise
  • 2 tablespoons cream

Instructions

  • In a medium sized mixing bowl, add the cooked salmon with celery, green onion, capers, parsley, dill, lemon pepper seasoning, salt, sugar, cayenne pepper, lemon zest, lemon juice, mayonnaise and cream and mix together well.
  • Taste and adjust salt to preference then serve on your favorite bread.
