Honey Mustard Chicken Salad

Tasty summer salad with grilled honey mustard chicken on it.

Ingredients

  • For the honey mustard chicken:
  • 1 pound chicken tenders
  • 1 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1/2 teaspoon Dijon mustard
  • 2 tablespoons honey
  • 1/2 teaspoon garlic powder
  • For the salad:
  • 8 cups mixed greens
  • 1 pound cooked honey mustard chicken tenders
  • 1 cup strawberries - sliced
  • 1 cup baby Bella mushrooms - sliced
  • 2 green onions - sliced thinly
  • 1 cucumber - sliced
  • 1/2 cup feta cheese
  • 1/4 cup raw pumpkin seeds
  • 1/2 cup strawberry poppy seed dressing or poppy seed dressing

Instructions

  • Sprinkle chicken tenders with salt, pepper and garlic powder.
  • Mix together the mustard and honey.
  • Grill chicken tenders for a few minutes on each side then brush chicken breasts with mustard and honey mixture on each side.
  • Continue cooking until chicken tenders are cooked through.
  • Add all of the salad ingredients to a bowl, I like to just lay them all on top of the mixed greens but you can mix it ahead of time.
  • Slice chicken tenders and add on top.
  • Serve with poppy seed dressing or strawberry poppy seed dressing.
  • Enjoy!
