Herbs De Provence Potato Wedges

Delicious herby potato wedges, perfect side dish to any meal.

Ingredients

  • 5 medium Russet potatoes
  • 1 tablespoon olive oil
  • 1 teaspoon salt - more or less depending on your saltiness preference
  • 1 teaspoon onion powder
  • 1 teaspoon herbs de Provence

Instructions

  • Preheat oven to 425 F.
  • Wash and pat dry potatoes.
  • Slice into wedges.
  • Toss in olive oil.
  • Lay flat on a greased or lined cookie sheet.
  • Sprinkle with salt, onion powder and herbs de Provence.
  • Bake for 40-45 minutes, flipping over at 30 minutes.
  • Remove from oven and sprinkle with more salt if desired.
