Ham and Asparagus Frittata

Ingredients

  • 9 eggs
  • 1/2 cup milk
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1/2 cup diced ham
  • 1/3 cup cheddar cheese - grated
  • 7 in spears asparagus - boiled or roasted before cooking so they are slightly softened then slicedhalf lengthwise

Instructions

  • Pre-heat the oven to 400 F.
  • Prepare the asparagus by boiling briefly or roasting in the oven, so the asparagus softens slightly then slice in half lengthwise.
  • In a bowl, add the eggs, milk, salt and black pepper and whisk together.
  • Add the diced ham and cheese and stir again.
  • Pour into a greased round baking pan, 8-12 inches will work, bigger pan means shorter cook time, smaller means longer.
  • Add sliced asparagus on top of egg mixture.
  • Bake for 20 minutes for a 12 inch pan to ~40 minutes for a 8 inch pan or until the centers are set and not liquidy.
  • Remove from oven, allow to cool slightly then enjoy!
