Cucumber Sushi Salad

Quick, easy and deliciously refreshing of sushi bowl without the rice.

Ingredients

  • 1/2 cucumber - sliced
  • 3 crab sticks - chunked up
  • 1/4 cup avocado - chunked
  • 1 sheet nori - torn into bite size pieces
  • 1 green onion - sliced thinly
  • 1/4 cup chili pepper - diced optional
  • 2 tablespoon rice wine vinegar
  • 1/2 teaspoon sesame oil
  • 1 teaspoon spicy mayo
  • 2 tablespoons french fried onions - optional
  • sesame seeds

Instructions

  • Slice cucumber, crab sticks, avocado, nori strip, green onion and chili pepper and add to a bowl.
  • Add rice wine vinegar and sesame oil and toss ingredients in mixture.
  • Top with spicy mayo, french fried onions and sesame seeds.
  • Enjoy!
