Chicken and apple sausage and cabbage stir fry

Ingredients

  • 1/2 cup bell peppers - any color
  • 2 green onions - diced
  • 2 cups green cabbage - thinly sliced
  • 2 cups purple cabbage - thinly sliced
  • 1 tablespoon fresh ginger - finely minced or 1 teaspoon ground ginger
  • 1 tablespoon garlic - minced
  • 1 tablespoon sesame oil
  • 2 tablespoons soy sauce
  • 1 tablespoon honey
  • Pinch of salt
  • 3 sausages - sliced into bite size rounds
  • 1 cup pineapple - if using canned drain the juice
  • 2 cup cooked rice - white or brown

Instructions

  • Add bell peppers, green onions, green cabbage, purple cabbage, fresh ginger, garlic and sesame oil to a large pan and stir over medium heat for 5 minutes or until they start to soften.
  • Add soy sauce, pinch of salt and honey to pan and cook for 2 minutes more.
  • Add sliced sausages, pineapple chunks and cooked rice and stir until rice, sausage and pineapple are warm.
