This skillet peach cobbler is the perfect dessert for 2-4 people! It’s easy to make and tastes delicious! Fresh peaches on the bottom get covered with a decadent cinnamon cake! It’s perfect with a scoop of ice cream or on it’s own.
This dessert is perfect straight from the oven. I like to flip mine over so I can see the peaches on the bottom, kind of like an upside down cake, a perk to this dessert as opposed to one you cook in a deep dutch oven. You can also serve it straight from the skillet too, it’s still going to taste amazing!
What you need to make skillet peach cobbler:
serves 2-4 people
- 2 peaches – skins on or off depending on preference, pit removed and sliced
- 1 tablespoon lemon juice
- 1/4 cup sugar
- 2 tablespoons corn syrup
- 3 tablespoons butter
- For the cake:
- 1/2 cup flour
- 1/2 cup sugar
- 1/2 teaspoon baking powder
- pinch of salt
- 1/2 teaspoon cinnamon
- 1 egg
- 1 tablespoon butter
- 1/4 cup milk
- 1 teaspoon vanilla
instructions
- Preheat oven to 350 F.
- In a bowl, add peaches, lemon juice, sugar and corn syrup and stir together.
- Spray pan with non-stick spray and place butter in chunks on the bottom of your 6 inch cast iron or any other oven proof skillet.
- Add the peach and sugar mixture on top of the butter.
- In another bowl, add flour, sugar, baking powder, salt and cinnamon and stir together.
- Add egg, butter, milk and vanilla and blend until batter is well mixed.
- Pour batter on top of the peaches.
- Bake for 30 minutes or until cake looks done.
- Flip cake over to see the peaches on top or serve straight from the bowl.
