These simple vanilla cupcakes are the perfect easy, moist and flavorful cupcakes. They are easy to make and can be made using one bowl and a mixing spoon. They taste great on their own or with any frosting from buttercream to Italian meringue.
My daughter actually made the cupcakes in the pictures and frosted them too. They are simple enough for kids to make and fun for them to decorate.
When I was a new mom I got into baking cakes more and started to do wedding cakes. I really wanted to find a simple vanilla cake recipe that was moist, delicious and simple to make. It was harder than I thought it should be. So over the years I have developed my own cake recipes and I this one is just that, simple, moist and delicious.
What you need to make simple vanilla cupcakes:
makes 24 standard sized cupcakes
- 1 3/4 cup flour
- 1 1/2 cups sugar
- 1 teaspoon salt
- 1 tablespoon baking powder
- 1/2 cup sour cream
- 3 eggs
- 1/4 cup oil
- 1 cup milk
- 1 teaspoon vanilla extract
Instructions
- Add the flour, sugar, salt and baking powder to a bowl and mix.
- Add the sour cream, eggs, oil, milk and vanilla extract to the flour mixture and mix it until it’s smooth.
- Line cupcake tin with liner and add batter about 2/3 of the way full.
- Bake for 13-15 minutes or when the tops are risen and a toothpick comes out clean.
- Cool and frost with your favorite frosting.
