Strawberry Blender Pancakes

It’s strawberry season! Do you remember when you couldn’t get strawberries all year round? Am I aging myself? Ha! Even though we can pretty much buy strawberries year round now, they are the juiciest and sweetest in summer! So these strawberry blender pancakes are an absolute summertime must!

The strawberry syrup (recipe here) with fresh strawberries and whipped cream really make this breakfast combo sing!

When my son was little he was obsessed with Daniel Tigers Neighborhood and on one of the episodes they make Strawberry pancakes. My son started asking for strawberry pancakes every. single. day.. So I created this recipe that is BURSTING with fresh strawberry GOODNESS!

When topped with my Strawberry syrup, fresh strawberries and Whipped cream to transport yourself into strawberry nirvana. Seriously!

Ingredients

  • 2 cups All Purpose Flour
  • 1 Tablespoon Baking Powder
  • 1 teaspoon Baking Soda
  • 1/4 cup Sugar
  • 1 teaspoon Vanilla Extract
  • 2 Large Eggs
  • 1/2 teaspoon Salt
  • 1/3 cup Melted Butter
  • 1 cup Fresh or frozen strawberries stems and leaves removed
  • 1 teaspoon Lemon Juice
  • 2 1/2 cups Milk

Instructions

  • Add all ingredients into the blender and blend on high until smooth, pausing to scrape down the sides of the blender to make sure everything gets mixed in.
  • Heat griddle or pan to medium high heat then adjust temperature so it’s not too hot. Spray cooking surface with oil. Pour batter onto griddle or pan, once you see bubbles in batter flip over and continue cooking until its cook through. I use about 1/8th of a cup to make 5" pancakes.
  • Top with strawberry syrup, fresh strawberries and whipped cream or maple syrup.
