Low Carb Quick Bread

This low carb quick bread is the perfect solution to that craving for a carb loaded sandwich or when you run out of bread and need something delicious to eat fast!

The first thing I crave whenever I cut carbs is actually a chicken sandwich, isn’t that weird? You would think it was a cookie, candy or chocolate but no it’s always a chicken sandwich. This low carb quick bread helps satiate that craving without giving in to carbs! Don’t get me wrong carbs are great and needed but I personally can really over do it with the over processed carbohydrates and then my blood sugar screams at me to get my act together if I don’t watch it!

This low carb quick bread has become a favorite of mine! I make breakfast sandwiches with it, lunch sandwiches, grilled cheese, the options are as big as your imagination!

I use my panini maker to make this but you can use a griddle, pan, or waffle maker too. You can even make this in the microwave, it’s that easy!

What you need

Makes 1 sandwich

1/3 cup almond flour 
2 eggs
Pinch of salt

  1. Whisk all ingredients together.
  2. If using a panini maker: pour wet batter onto hot panini maker and close for roughly 30 seconds to 1 minute.
  3. Open and if making a cold sandwich remove from panini maker and cool bread then add fillings and fold one side over the other to create a sandwich.
  4. If you want a melty sandwich, fill one side with all your favorite toppings, mine was ham, white cheddar and fresh tomatoes. Fold the other side of the bread over top and repress the panini maker down over the closed sandwich until the cheese is melty (about 30 seconds more) and enjoy!
  5. If using a griddle or pan: lightly grease the surface, pour batter into 2 square shapes, cook until mixture is mostly cooked then gently flip over for a few seconds to finish the cooking.
  6. If making in a microwave: pour batter into microwave safe square Tupperware dish and cook for 45 seconds or until cooked through, let cool slightly then slice in half and fill with ingredients.
