Steak and Pepper Salad

This steak and pepper salad has such bright and delicious flavors! It’s made up of spring mix, bell peppers, tomatoes, avocado, slivered almonds, feta cheese, and, of course, tender steak! The flavor bomb really explodes with the addition of the easy-to-make dressing, which has cilantro, green onions, orange juice, and red wine vinegar, which gives it a chimichurri-inspired feel.

This salad is perfect for a summer lunch or dinner, where you want the feeling of a full meal but the lightness of a salad. I love a good salad for lunch or dinner, and this one packs plenty of protein to leave you feeling satiated. It’s a favorite at my house and I hope you love it like we do!

Everything can be meal-prepped, and this would make for a great option for meeting your protein macros, also a great option for low carb and high fat diets such as keto because of the avocado.

What you need to make this steak and pepper salad: (Printable recipe card below)

Serves 1 as an entree or 2-4 as a side

  • Large handful of spring mix
  • 3 mini bell peppers -sliced
  • ~5 cherry tomatoes – sliced in half
  • Sprinkle of slivered almonds
  • Fresh cilantro to preference
  • Crumble of feta to preference
  • Fresh cracked black pepper
  • 1/2 an avocado
  • ~1/3 pound of cooked steak

For the dressing:

  • 1 teaspoon minced cilantro
  • 1 teaspoon diced green onion
  • 1/4 teaspoon Dijon mustard
  • 2 tablespoons red wine vinegar
  • 1 teaspoon orange juice
  • 2 tablespoons grape seed or flavor neutral oil
  • 1 teaspoon honey
  • Pinch of salt & pepper

Instructions

  1. Add all salad ingredients to a large bowl.
  2. Whisk together all of the dressing ingredients.
  3. Top salad with dressing and enjoy.

Ingredients

  • Large handful of spring mix
