This Chai spiced coffee cake features a delicious coffee cake with a chai spiced crumble on top with a vanilla glaze. It gives a fun nod to a vanilla chai latte but has no tea in it. It’s a family favorite at my house!
Growing up I loved coffee cake and I still do! My aunt used to make it at her house all of the time and I loved when I was over and she would make it! They called it milk cake because they didn’t drink coffee, so when I got older I learned the real name of this delicious cake.
This recipe has lots of crumble on top because I love lots of crumble on coffee cake! If you aren’t so keen on the crumble, you can cut the crumble recipe in half, other wise be prepared for lots of spiced buttery crumbles on top.
The spice blend in this cake’s topping are the same spices found in chai tea but I have simplified things for you a little bit, by having you use pumpkin pie spice with a few other spices to get the feel without having to have a lot of spices individually on hand.
Here is what you need to make this Chai Spiced Coffee Cake: (Printable recipe card is below)
Makes 1 – 9 x 13
- 1 1/2 cups sugar
- 1/2 cup vegetable oil
- 3 eggs
- 1 teaspoon vanilla
- 2 teaspoon baking powder
- 1 teaspoon salt
- 2 cup flour
- 1 cup milk
Chai Spiced Crumble Topping
- 1 cup flour
- 1/2 cup sugar
- 1 tablespoon cinnamon
- 1/2 teaspoon cardamom
- 1 tablespoon pumpkin pie spice
- 1/2 teaspoon salt
- 1/2 cup butter – melted
Vanilla Glaze:
- 1 cup powdered sugar
- 1 tablespoon melted butter
- pinch salt
- splash vanilla extract
- 3 tablespoons milk
Instructions
- Preheat the oven to 350 F.
- In a large mixing bowl, add all cake ingredients into the bowl and mix well.
- Pour cake batter into a grease 9 x 13 inch pan.
- In small mixing bowl, make the crumble by adding the flour, sugar, cinnamon, cardamom, pumpkin pie spice and salt together and stirring well.
- Add the melted butter and gently mix together so a crumble forms.
- Sprinkle the top of the cake with the crumble evenly.
- Bake the cake for ~45-50 minutes or until the cake is baked through in the center.
- Remove cake from the oven and while it’s cooling, mix together the glaze.
- Add all glaze ingredients in a small bowl then drizzle over the cake before enjoying.
