This pear and cardamom pie showcases the beautiful flavors of pears. The cardamom and other spices help highlight the pears and give this pie a wonderful warmth.
Similar to an apple pie but yet completely unique and all it’s own.
Serve with some vanilla ice cream for a really decadent dessert.
I have a pear tree in my back yard and every September I am flooded with pears, I love it but it can also be really overwhelming. This pie is a perfect way to use the pears up.
You can make this pear filling and freeze or bottle it for later use as well. It will last for roughly 1 year after processing.
If water bath canning this filling, I would increase the lemon juice to 2 tablespoons and process for roughly 20 minutes, follow the canning guidelines for water processing according to your cities elevation.
What you need to make this pear and cardamom pie:
makes 1 standard sized pie 7-10 inches
- 1 pie crust – plus more for optional lattice or full top crust
- 7 pears – peeled and cored
- 3/4 cup sugar
- 1 teaspoon ground cardamom
- 1/4 teaspoon nutmeg
- 1/4 teaspoon cinnamon – plus more for dusting on top
- 1 tablespoon lemon juice
- 2 tablespoons cornstarch
- 2 tablespoons brown sugar – to sprinkle on top
Instructions
- Preheat oven to 350 F.
- Make your pie dough and place into a pie pan, bake bottom crust for 20 minutes with weighted beans to prevent any shrinkage.
- To prepare the filling, add peeled and cored pears, sugar, cardamom, nut meg, cinnamon, lemon juice and cornstarch and stir together.
- Pour filling into the pie crust, add lattice crust or full coverage top if you want a top crust. Sprinkle top with brown sugar and a sprinkle of cinnamon.
- Bake for 1 hour and 20 minutes or until the pie crust is golden and baked.
- Allow pie to rest for a day before cutting and enjoy.
