Mediterranean Chicken Salad Wraps

These Mediterranean chicken salad wraps are packed with delicious Mediterranean inspired flavors. They are super easy to mix up together and make the perfect lunch or quick dinner.

I love the mix of vegetables, herbs and chicken in this mix.

I have had the opportunity to eat lunch with my husband almost everyday for the past 15 years! We have somehow always lived close enough to his work that he has been able to come home for lunch.

During the pandemic he started working from home and rarely goes into the office so he is here for lunch even more. I love that I get to see him at lunch time but it also means I need to make a quick lunch to feed him.

I find myself making lots of sandwiches, wraps and salads for him and that is exactly what this recipe was created for.

This Mediterranean chicken salad wrap can be made with any grilled or cooked chicken breasts. A rotisserie chicken would work great or any leftover chicken.

I also like to have frozen cooked chicken breasts on hand as well as canned chicken.

When I cook chicken I tend to cook more than I need for one meal because I will always use it in a meal the next day or so. Like this meal, I just grab it from the refrigerator, chop it up and throw it in.

What you need to make these Mediterranean chicken salad wraps: (printable recipe is below)

Makes 2 large wraps

  • 1 1/2 cups grilled or cooked chicken breast – diced
  • 1/4 cup bell pepper – any color, finely diced
  • 2 tablespoons Kalamata olive pieces
  • 2 tablespoons feta crumbles
  • 3 tablespoons red onion – minced
  • 3 tablespoons cucumbers – diced
  • 1 tablespoon sun-dried tomatoes – diced (optional)
  • 1/4 teaspoon black pepper
  • 1/4 teaspoon salt – more to taste
  • 1/4 teaspoon dried oregano
  • dash of dried marjoram (optional)
  • 1/8 teaspoon garlic powder
  • 1/4 cup mayonnaise
  • 1 tablespoon lemon juice
  • 2 large wraps or burrito size tortillas
  • 1 cup lettuce – shredded (optional)

Instructions

  1. In a medium sized bowl, add chicken, bell peppers, Kalamata olives, feta, red onion, cucumbers, sun-dried tomatoes, black pepper, salt, oregano, marjoram, garlic powder, mayonnaise and lemon juice together and stir well.
  2. Taste and adjust salt to preference.
  3. Place chicken salad with optional lettuce in wrap or burrito tortilla and fold ends in like you would a burrito and roll together.
  4. Enjoy!
