Here’s a healthy, easy and delicious lunch or dinner for you! This chicken salad stuffed pepper recipe is fresh and yummy! I made this recipe close to Halloween time, thus the jack-o-lantern face in the side of mine.
This chicken salad stuffed pepper recipe can be made and enjoyed any time of year. It’s low carb and packed with protein, fruits and vegetables.
You can also meal prep these a day in advance and store the chicken salad in a separate container then you can spoon them into the peppers just before eating.
What you need to make chicken salad stuffed peppers:
Makes ~2 large stuffed bell peppers full
- 2 large bell peppers- any color, top sliced off and seeds removed.
- 1 small chicken breast – cooked and chopped
- 1 stalk celery – diced
- 1/2 small apple – diced
- 1/2 avocado chopped up
- 1/4 teaspoon salt
- 1/4 teaspoon pepper
- 2 tablespoons olive oil mayonnaise
- 1 teaspoon lime juice
- 1 cup romaine lettuce – chopped
Instructions
- Add diced chicken breast, celery, apple, avocado, salt, pepper, mayo and lime juice in a bowl and stir.
- Add Romaine lettuce and gently stir.
- Serve in a bell pepper that has the seeds removed.
