Need a delicious and super easy healthy dinner? These sesame chicken lettuce cups have got you covered! This is a 15 minute meal prep to finish and the flavors are super yummy!
I love the taste of sesame oil, specifically toasted or dark sesame oil, The nuttiness from it is something that I crave. So these sesame chicken lettuce cups just seemed like a good fit for a healthy, delicious and oh so easy dinner idea.
The sesame seeds in this mixture give these a fun crunch that I personally love, If you don’t love sesame seeds, you can obviously leave them out or if you want to use different varieties of sesame seeds, be my guest, I think they would taste delicious!
This meal is fairly low carb with the exception of the honey, you can use any of your favorite sugar replacers if you don’t want any carbohydrates in this meal or leave it out. The sweetness does bring balance to the dish but I did try this dish without the honey and it is still yummy, just less sweet.
What you need to make these sesame chicken lettuce cups:
Serves 4
- 1/4 cup toasted sesame oil
- 1 pound ground chicken
- 3 cloves or 1 heaping tablespoon garlic – minced
- 1 tablespoon fresh ginger or 1/2 teaspoon ground ginger- minced
- 2 tablespoons soy sauce or favorite soy sauce substitute
- 1 tablespoon honey
- Three green onions
- 1 tablespoon sesame seeds
- 2 tablespoons rice vinegar
- Pinch of salt – to taste
- 1 head butter lettuce
Instructions
- Prepare your lettuce leaves by washing and separating into individual lettuce leaves for the cups, set aside.
- In a pan, add sesame oil, garlic, ginger and ground chicken.
- Cook until chicken looks mostly cooked through.
- Add soy sauce, honey, green onions, sesame seeds, rice vinegar and a pinch of salt to mix and cook until chicken is coated in sauce and cooked all of the way through.
- Remove from heat and serve in lettuce cups.
- Enjoy!
