This sugar snap pea and lemon salata is bright, fresh and so delicious! It’s the perfect light and flavor packed side dish! I love how the lemon zest comes through and you get a great bite from the lemon juice and red wine vinegar with saltiness from the parmesan cheese and the perfect kick from the black pepper and the crisp earthiness from the snap peas.
I use grated Parmesan cheese in this recipe but you can use shredded or shaved if you want to. For the snap peas, I roughly chop them so they are bite sized and reminiscent of a chopped salad.
This salad will serve 2 as a side dish or 1 as a main course and will take only a few minutes to pull together, it’s super easy.
What you need to make sugar snap pea and lemon salata:

- 1 1/2 cups sugar snap peas
- 1/2 teaspoon lemon zest
- 1 teaspoon lemon juice
- 2 tablespoons parmesan cheese – grated or ground
- pinch of fresh black pepper
- pinch of salt
- 1 teaspoons red wine vinegar or vinegar of choice
- 2 teaspoons olive oil
- pinch of sugar
Instructions
- Chop your sugar snap peas and add to a bowl, add your lemon zest, lemon juice, parmesan cheese, black pepper and salt together and give it a good stir.
- Whisk together the red wine vinegar, olive and sugar together and then pour over the top and stir quickly again.
- Serve chilled, enjoy!
