This ham and avocado croissant bake is a great breakfast or brunch option. It’s full of flavor and resembles a fancy version of avocado toast in flavor.
This bake is filled with a base of chopped croissants, diced ham, provolone cheese, avocado slices and eggs. It’s fairly easy to throw together and can even be prepped a day before and then baked when you are ready to eat it.
I love to use leftover croissants for this recipe. I usually buy a big pack of them from Costco and we usually ended up having a few leftover that got a little dried out for my kids liking, so this recipe is perfect for them. The slightly dryer croissant will absorb the egg mixture and makes for a delicious combination of flavors.
I made this recipe around Christmas time and I think it’s a great holiday breakfast! Perfect for Christmas, Easter and mother’s day. It would be great for weekends too or any day you want to enjoy a yummy breakfast or brunch.

Makes 1 – 9 x 13 inch pan – serves ~ 6
- 4 large croissants – cut into cubes
- 1 cup ham – chopped
- 1 cup provolone or cheese or choice- sliced and chopped
- 1 avocado – sliced
- 8 eggs
- 1/2 cup milk
- Salt and pepper to preference
Instructions
- Preheat oven to 400 F.
- Prepare all ingredients except for the eggs and milk then add them to a greased 9 x 13 baking pan. Sprinkle the top of the ingredients with a sprinkle of salt and pepper to preference.
- Mix together the eggs and milk and a pinch of salt and pepper then whisk well.
- Pour egg mixture over the dry ingredients then bake for 35-40ish minutes or until the egg is cooked though.
- Serve and enjoy.
