I love this Kohlrabi Pasta with Sausage and Feta! It’s full of so much delicious flavor and it’s healthy for you too! It’s great for anyone watching macros or trying to eat healthy and doesn’t want to give up taste!
This recipe features, ground turkey sausage, red onion, garlic, kohlrabi pasta (shredded kohlrabi), tomatoes, spinach and feta! It’s hearty, so flavorful and delicious!
I would call this recipe an “ugly but delicious” recipe! Sometimes the best flavor comes from dishes like this and this one just isn’t the prettiest dish, don’t hold that against it, it makes up for it with it’s yumminess!
What is kohlrabi?
I love kohlrabi, it’s part of the cabbage family and is a wild cabbage and also known as a German turnip or turnip cabbage. When shredded kohlrabi makes a great pasta substitute! It’s got a lower glycemic index too! Many grocery stores are starting to sell it shredded in their produce section and I love that it’s becoming more well known and available!
I found it shredded at Trader Joes a few weeks ago and knew I wanted to create a delicious recipe with it. This recipe features, ground turkey sausage, red onion, garlic, kohlrabi pasta (shredded kohlrabi), tomatoes, spinach and feta! It’s hearty, so flavorful and delicious!
Here is what you need to make this Kohlrabi Pasta with Sausage and Feta: (printable recipe card is below)
Serves 4
- 1 pound turkey sausage
- 1 red onion
- 1 tablespoon garlic – minced
- 1 tablespoon olive oil
- 10 ounces kohlrabi pasta or shredded cabbage
- 1/2 cup water
- 16 ounces tomatoes
- 3 generous handfuls spinach
- 4 ounces feta
- Pinch of salt and pepper – to taste
Instructions
- Sauté the sausage, onions and garlic in olive oil.
- Add in kohlrabi, tomatoes, water and spinach and cook until vegetables start to soften.
- Add feta and stir until feta melts into the vegetables.
- Salt and pepper to taste and enjoy.
