This one pot chicken and mushroom spaghetti recipe is a creamy, savory and comforting dish that is easy to make and perfect for weeknights, yet it’s fancy enough for a dinner party with guests too.

I will be honest, I don’t cook with cream of mushroom soup very often, I am a from scratch gal, however, this recipe is so easy to make and the cream of mushroom soup really helps flavors develop so quickly that I am a believer in using it for this recipe.

The cream of mushroom soup also gives this recipe a lovely creamy texture that is scrumptious! It perfectly coats the pasta and balances great with the sautéed mushrooms and chicken.

This recipe is a one pot dinner. However, I do have you cook the pasta and then drain it and set it aside while you cook the sauce in the same pot. If you are under a time crunch you can make both the pasta and the sauce at the same time and then this dinner does become a 2 pot meal but it will be a little faster.

Serves 6
- 1 pound dry spaghetti
- 4 tablespoons olive oil
- 8 ounces mushrooms – diced
- 4 cloves garlic – minced
- 1 pound chicken – sliced into chunks
- generous pinch of salt
- 1 can cream of mushroom soup
- 1 can milk
- 1/2 teaspoon ground sage (optional)
- 1/2 cup parmesan
- 1/2 teaspoon black pepper
Instructions
- In a large pot, add salted water and bring to a boil.
- Cook pasta until it is al dente then strain and set aside.
- Add olive oil, mushrooms, garlic, diced chicken and a generous pinch of salt.
- Sauté until chicken is cooked through.
- Add the cream of mushroom soup to the pot with the chicken and mushrooms along with milk, ground sage (if using), parmesan cheese and additional black pepper then stir until a smooth sauce forms.
- Add the cooked pasta and stir together until it is evenly coated.
- Serve and enjoy.
