This smoked salmon southwest salad is full of flavor and yummy textures. It has smoked salmon, pepitas, crispy jalapenos, feta, green onions, cilantro, corn and tomatoes, The dressing is a cilantro vinaigrette.
I love to use the honey smoked salmon from Costco, it has more of a baked salmon feel to it than traditional smoked salmon. Any type of salmon will work for this recipe.
The dressing is simple a simple cilantro vinaigrette that is a little sweet and savory. It comes together really quickly and adds the perfect flavor to the salad.
What you need to make this smoked salmon southwest salad: (printable recipe card is below)
Serves 2 as a main entrée
- 4 handfuls lettuce – chopped
- 1 cup corn
- 1/2 cup cilantro
- 1/2 cup feta crumbled
- 1/2 cup tomatoes
- 1 green onion – diced
- 3 tablespoons crispy jalapenos
- 2 tablespoons pepitas
- 3/4 cup smoked salmon
For the cilantro vinaigrette:
- 1 cup cilantro
- 2 cloves garlic
- 1 tablespoon mustard
- 1 1/2 teaspoons sugar
- 1 teaspoon salt
- 1/4 cup oil
- 1/4 cup white vinegar
Instructions
- Add all of the salad ingredients into a serving dish.
- To make the dressing, add all of the ingredients into a blender and or food processor and blend together until smooth, If you don’t have a blender, you can finely mince the cilantro and garlic and whisk dressing together.
- Dress with desired amount of dressing and enjoy!
