This grilled chicken with romesco sauce makes for a flavorful and easy dinner! The chicken is simply seasoned with salt, pepper, garlic powder and paprika.
I don’t measure on these seasonings, but just do a generous sprinkle on each chicken breast, I figure most people are like me when seasoning meats, you just eyeball it and so this recipe breaks my baking background with no specific measurements on seasoning.
Trust me when I say I trust you and this will turn out great if you just use your intuition. The romesco sauce however does have measurements and I have included the recipe card for that below this recipe.
Here is is link for the romesco sauce if you want to look at that post. The one I use has pumpkin seeds, however, if you want to make it more traditional, you can use almonds instead of pepitas.
I also have a non-traditional romesco sauce that is made with green chili’s and pistachios and it is one of my favorite sauces.
What you need to make this grilled chicken with romesco sauce: (printable recipe card is below)
Makes 2 pounds of chicken
- 2 pounds of chicken breast
- season with salt, pepper, garlic powder, paprika
- 1 cup romesco sauce (recipe card is below)
Instructions
- Preheat grill to 400 F.
- Season chicken with salt, pepper, garlic powder and paprika on each side.
- Keep in mind that the romesco sauce has salt in it so don’t go overboard on the salt, it will balance out with the sauce and you can adjust as you serve it.
- Place chicken on grill and cook until it is 165 F. internally.
- Make or open romesco sauce and place on serving dish, after chicken has rested for a few minutes, slice into strips then lay on the bed of romesco sauce, serve and enjoy.

Pumpkin Seed Romesco Sauce
Ingredients
- 16 ounce jar of roasted red peppers – drained
- 4 cloves garlic
- 1 cup pepitas unsalted, unshelled pumpkin seeds
- 1 teaspoon salt
- 1 teaspoon blackened seasoning
- 1/2 teaspoon paprika
- 3 tablespoons red wine vinegar
- dash of cayenne pepper
- pinch of sugar
Instructions
- Add all ingredients together then blend until smooth.
- Use as desired and keep refrigerated for up to a few weeks.
