I love this pear harvest salad and I could honestly eat this every day and be happy with life. I love the combination of flavors from the pear, pecans, bacon, feta, cranberries, red onions and balsamic vinaigrette.
You can add chicken to this recipe as well, especially if you are making this a main entrée. This salad will feed 1-2 people as a main course, if you are looking for a large entrée then it will serve 1.
This type of salad is my oldest daughter’s absolute favorite type of salad, ever since she was little she always gravitated towards salads with the savory, sweet, crispy and crunchy combo’s and balsamic vinaigrette is her love language. I can’t say I blame her, I love them too!
This salad can easily be made ahead of time, just reserve adding the pear and dressing until you are ready to serve.
This salad may have harvest in the title but I assure you it is delicious all year round. However, I can assure your that I will be making this salad in the Fall too! I have 2 pear trees in my backyard and I am always up for a delicious way to use them!
What you need to make this pear harvest salad: (printable recipe card is below)
Makes 2 salad servings or 1 large entrée salad
For the salad:
- 4 generous handfuls spring mix
- 1/3 cup toasted pecans
- 3 tablespoons bacon bits – the real ones are preferred
- 4 tablespoons feta crumbles
- 3 tablespoons dried cranberries
- 3 tablespoons red onion – thinly sliced
- 1 pear – cored and thinly sliced, Red, Anjou, Bosque or Bartlett pears will all work
- 1/2 cup chicken breast diced – optional
For the balsamic vinaigrette:
- 1 teaspoon mustard
- 2 tablespoons sugar
- 3 tablespoons balsamic vinegar
- 3 tablespoons grapeseed oil
- 1/8 teaspoon salt
- dash of black pepper
Instructions
- In a large serving bowl, add spring mix, toasted pecans, bacon bits, feta crumbles, dried cranberries, red onion and sliced pear on top. If adding cooked chicken, add that now too.
- Make the dressing by adding all of the ingredients into a bowl and whisking until dressing comes together.
- Dressing to preference and enjoy.
