I could eat this roasted cauliflower with creamy dill sauce any day! I love it! It’s super flavorful and the dill cream sauce adds that extra yumminess that makes it so delicious!
I am a lover of all roasted veggies and roasted cauliflower is one of my favorite roasted veggies. It’s just so versatile and flavorful. This recipe is simple on the seasoning, meaning I only add olive oil and salt to the acutal cauliflower when I roast it.
The cream sauce has dill, garlic, parmesan and lemon and enhances the roasted cauliflower.
I created this recipe because I was doing a heritage week on my Instagram account where I was making Swedish inspired recipes to honor my ancestors that came from Sweden. It will definitely be a favorite of mine in the future too!
What you need to make this roasted cauliflower with creamy dill sauce: (printable recipe card is below)
Serves 4
- 1 head of cauliflower – cut into florets
- olive oil
- salt
For the dill sauce:
- 1/2 teaspoon dried dill or 1 tablespoon fresh dill – minced
- 2 tablespoons mayonnaise
- 1 tablespoon lemon juice
- 1 tablespoon cream
- 1 pinch of salt
- 1 tablespoon grated parmesan cheese
- 1/2 clove garlic (minced) or a dash of garlic powder
Instructions
- Preheat oven to 400 F.
- Add cut cauliflower to a lined or greased baking sheet, drizzle it with olive oil and sprinkle with salt.
- Bake for 35 minutes or until the cauliflower is cooked.
- In another bowl, mix together the dill, mayonnaise, lemon juice, cream, salt, parmesan cheese and garlic then mix well.
- Once the cauliflower is done roasting, add the cream sauce to the cauliflower and mix around well then enjoy.
