This easy lingonberry syrup is delicious! It comes together quickly and goes great on breakfast favorites like pancakes, waffles, Swedish pancakes (My recipe is here), or even on ice cream or cakes.
I love that this syrup comes together super quickly, I use the lingonberry drink concentrate from Ikea for this because it is the best and easiest way for me to find lingonberry flavoring. However, you can use real berries or any other type of flavoring here is how to adjust for that.
If you have lingonberries on hand you can adjust this recipe by cooking the berries into the syrup. You can use about 1/2 cup berries and an additional 1/4 cup water then cook it all down and then strain out the berries.
What you need to make this easy lingonberry syrup:
Makes ~1 cup of syrup
- 1/4 cup corn syrup
- 1/4 cup lingonberry drink mix – Ikea (if you have lingonberries, use 1/2 cup berries and 1/4 cup water, then strain the syrup before use)
- 2 tablespoons lemon juice
- 1/2 cup sugar
Instructions
- Add all of the ingredients into a pot and bring to a boil then reduce to a simmer and let it simmer until it can coat the back of a spoon.
- Remove from heat, if you used berries, strain them out, then use syrup as desired.
