Lemon Pepper Salmon Salad Sandwiches

These lemon pepper salmon salad sandwiches are so flavorful and delicious! They are perfect for spring or summer day and are filled with bright flavors like lemon pepper, dill, capers and parsley that pair gorgeously with the salmon.

You can use precooked salmon or roast your own. Both will work great and taste delicious. For me it really comes down to what time do I have to make this recipe.

When I have the time, I love to put my salmon in the air fryer for 15 minutes with a little lemon pepper seasoning on it and let it cook while I prepare the rest of this salad, then when it’s done I chill it by sending it for a quick trip to the freezer then I flake it and add it to this recipe.

I was doing a heritage week on my Instagram where I focused on my Swedish ancestry and this recipe was born from that. I will be adding many more Swedish inspired dishes on here soon. My great, great, great grandma came from Sweden to the United States and my great, great grandma recorded her favorite recipes in a book along with her 3 sisters and it is a gem to have. I will be sharing a few of their favorite recipes with my own spin on them.

  1. In a medium sized mixing bowl, add the cooked salmon with celery, green onion, capers, parsley, dill, lemon pepper seasoning, salt, sugar, cayenne pepper, lemon zest, lemon juice, mayonnaise and cream and mix together well.
  2. Taste and adjust salt to preference then serve on your favorite bread.

Ingredients

  • 1 pound salmon – cooked cooled (canned or baked works great)
  • 1 stalk celery – finely diced
  • 1 green onion – finely diced
  • 1 tablespoon capers
  • 1 tablespoon fresh parsley or 1 teaspoon dried – minced
  • 1 tablespoon fresh dill or 1 teaspoon dried dill – minced
  • 1 teaspoon lemon pepper seasoning
  • dash of salt
  • Pinch of sugar
  • dash cayenne pepper
  • zest of 1 lemon – optional
  • 2 tablespoons lemon juice
  • 3 tablespoons mayonnaise
  • 2 tablespoons cream
