This lemon blueberry poppy seed salad is a fun twist on the classic flavors of blueberry, lemon and poppy seeds. It’s sweet, sour, a little salty, fresh and vibrant.
This salad came about because I had an abundance of blueberries in my fridge and needed to bring a salad to an event that night. So I took a quick look around and decided to add them to a fun lemon blueberry inspired salad.
I was happy with the result and found myself wiping the plate with my finger to get the extra dressing off. The salad quickly got eaten at the event and I can’t wait to make it again!
This salad has pine nuts or you can use slivered almonds, shaved parmesan, lemon zest, blueberries and tender baby spinach. If you love toasted pine nuts, feel free to give them a quick toast in pan but they are great not toasted too.
The dressing is sweet, sour and lemony with fresh lemon juice, honey and poppy seeds. It wakes up all the flavors of the salad and gives this salad the extra personality that it needs to make it shine.
What you need to make this Lemon Blueberry Poppy Seed Salad:
Serves 6
For the salad:
- 4 generous handfuls baby spinach
- 1 cup blueberries
- 3 tablespoons pine nuts or slivered almonds – you can toast them if desired
- zest of 1 lemon
- 1/4 cup shaved parmesan cheese
- ground black pepper
For the honey lemon poppy seed dressing:
- 1 1/2 teaspoons honey
- 1 teaspoon Dijon mustard
- 1 1/2 tablespoons sugar
- 1 teaspoons vinegar
- juice from 1 lemon or about 3 tablespoons
- 4 tablespoons grapeseed or avocado oil
- Pinch of salt
- 2 teaspoons poppy seeds
Instructions
- In a large serving bowl, add the spinach, blueberries, pine nuts, zest of a lemon, parmesan cheese and fresh black pepper on top.
- In a blender or bowl, blend or whisk together the honey, Dijon mustard, sugar, vinegar, lemon juice, oil, salt and poppy seeds.
- Dress salad as it’s served or add to salad, toss and enjoy.
