I love, love, LOVE this Mediterranean salad and could honestly eat it weekly and be content with my life. It has so much freshness and flavor packed into a salad and it makes my taste buds sing!
This recipe is also a copycat recipe of Grimaldi’s Mediterranean salad. I put out a post on my Instagram account asking for everyone’s favorite restaurant salad and this is one that I received.
Even though I live over 400 miles away from the nearest Grimaldi’s I have had their salad a few times and I love it! So, I was excited to recreate it at home so I can enjoy it without the trip.
The salad has all things Mediterranean, like cucumbers, tomatoes, red onions, herbs, feta and olives. I add pepperoncini peppers to mine and black olives but you can adjust that however you like.
The dressing is a red wine vinaigrette with herbs, olive oil and diced red onions. It’s a delicious burst of flavor that brings all flavors together.
What you need to make this Mediterranean Salad: (Printable recipe card is below)
Serves 2 as a side or 1 as a main entrée
- 2 generous handfuls romaine lettuce – chopped
- 1/2 cucumber – peeled and diced
- 1/2 tomato – diced
- 1/8 red onion – diced or sliced
- 1/4 cup Kalamata olives – pits removed
- 3 tablespoons feta
- 2 tablespoons pepperoncini peppers – optional
- 1/4 cup black olives – optional
Red Wine Vinaigrette:
- 2 tablespoons red wine vinegar
- 1 tablespoon minced red onion
- 4 tablespoons olive oil
- 1 teaspoon dried Italian seasoning
- 1/2 teaspoon salt
- 3/4 teaspoon sugar
- 1/8 teaspoon black pepper
Instructions
- Add all of the salad ingredients into a medium sized serving bowl.
- In another bowl, add all of the salad dressing ingredients and whisk together.
- Add dressing over the top of the salad and enjoy.

Ingredients

- 3/4 teaspoon sugar
- 1/8 teaspoon black pepper
Instructions
- Add all of the salad ingredients into a medium sized serving bowl.
- In another bowl, add all of the salad dressing ingredients and whisk together.
- Add dressing over the top of the salad and enjoy.
