These easy microwave Scotcharoos are so yummy! They come together really quickly and are perfect for a no bake dessert!
A scotcharoo is essentially a peanut butter rice crispy treat that is covered in a chocolate and butterscotch chocolate ganache topping. They are super delicious and the perfect blend of sweet and a little salty from the peanut butter.
The chocolate and butterscotch blend together to form a warm and decadent ganache like topping that resembles a thin layer of fudge. So good!
These microwave ones are super easy, don’t require any babysitting over a stove and taste great!
What you need to make these easy microwave Scotcharoos: (printable recipe is below)
Makes 1 – 9 x 13 pan
- 10 ounces marshmallows
- 1/4 cup salted butter
- 1 cup peanut butter
- 1/4 cup sugar
- 5 cups rice crispies
For Butterscotch Chocolate topping:
- 1 1/2 cups milk chocolate chips
- 1 1/2 cups butterscotch baking chips
- 1 tablespoons salted butter
Instructions
- In a large microwave safe bowl, add the marshmallows and butter and microwave for 30 seconds.
- Add the peanut butter and sugar and microwave another 1 minute and 30 seconds or until marshmallows are softened and gooey.
- Mix together until peanut butter is mixed into the marshmallows.
- Add the rice crispies and stir together.
- Press the rice crispies into a 9 x 13 pan then set aside.
- In a medium microwave safe bowl, add milk chocolate chips, butterscotch chips and butter to a bowl and microwave for 30 seconds, then stir and microwave for another 30 seconds then stir, until the chocolate and butterscotch are melted together and smooth.
- Pour mixture over the rice crispy mixture and spread until it’s smooth and evenly spread.
- Let the chocolate butterscotch mixture cool and then slice and enjoy.
