This Caribbean sheet pan dinner is inspired by the flavors of the Caribbean with it’s peppers, plantains, chicken and garlic pepper herb spice blend. It’s healthy, delicious and so easy to make.
I love to use the spice theory brand of spices (click here to shop their spice blends). The one I use for this recipe is the garlic herb pepper blend that they call “Fern Gully”. It’s packed with delicious and authentic flavors! The spice theory blends uses less salt in their blends than other brands, in this blend it’s 59% less to be exact!
That means you are getting better quality ingredients and more flavor for your spice blend! Which is one of the key factors I look for in a spice blend. I always read my spice blend’s ingredient list before buying them because you can know if a blend is good or not by reading the first ingredient. If salt is listed as the first ingredient, then you should keep looking. Less salt in a blend usually means it has more flavor and better quality ingredients.

What you need to make this Caribbean Sheet Pan Dinner: (Printable recipe card is below)
Serves 4-6
- 1 plantain – peeled, cut into chunks
- 3 bell peppers- any color, cored, cut into chunks
- 2 small zucchini – cut into chunks
- 1 red onion – cut into chunks
- 2 tablespoons olive oil
- 1 1/2 tablespoons garlic herb pepper blend (Fern Gully from spice theory)
- 4 boneless skinless chicken thighs or chicken breasts, fresh or frozen
- Pinch of salt – optional
Instructions:
- Preheat oven to 425 F.
- Cut all of the vegetables and place them into a large bowl.
- Add olive oil, 1 tablespoon of the garlic herb pepper blend then mix together so all vegetables get coated.
- Pour veggies onto a parchment paper lined or greased cookie sheet.
- Add the chicken thighs or breasts to the pan between or on top of the vegetables.
- Sprinkle the remaining seasoning on top of the chicken, along with a optional pinch of salt.
- Bake for 1 hour.
- Dish up vegetables with the chicken and enjoy.
