Pumpkin Muffins with Streusel Topping

These pumpkin muffins with streusel topping are my favorite! They are perfectly spiced, moist and tender muffins with the delicious snack-worthy streusel crumb topping on top. Yum!

I know pumpkin is know as a fall and winter treat but I would happily eat these any time of year!

This recipe is a dump and mix kind of muffin, which I love for simplicity and get-it-done’s sake. I am well versed in technical baking but I also really appreciate a dump and mix recipe!

I love the topping so I have made this recipe to have a good amount per muffin but if you are streusel obsessed you can double this recipe for a really over the top muffin or if you aren’t a but fan you can always cut the topping recipe in half or leave it off, no judgement.

Makes 24 muffins

  • 1 1/3 cup sugar
  • 1/2 cup salted butter – melted
  • 2 eggs
  • 1 teaspoon vanilla extract
  • 1 cup pure pumpkin puree
  • 1 tablespoon ground cinnamon
  • 1/2 teaspoon ground ginger
  • 1/2 teaspoon nutmeg
  • 1/4 teaspoon cardamom
  • 2 1/2 cups flour
  • 1 teaspoon salt
  • 1 1/2 teaspoons baking powder
  • 1/4 cup milk

Streusel Topping:

  • 1 cup flour
  • 1/2 cup sugar
  • 2 teaspoons cinnamon
  • pinch of nutmeg
  • pinch of salt
  • 6 tablespoons salted butter – melted

Instructions

  1. Preheat oven to 350 F.
  2. Line muffin tin with liners or grease tin well.
  3. In a large mixing bowl, add sugar, melted butter, eggs, vanilla, pumpkin, cinnamon, ginger, nutmeg, cardamom, flour, salt, baking powder and milk then mix well.
  4. Add all streusel topping ingredients together in a separate bowl until a crumble forms.
  5. Spoon batter into a lined or greased muffin tin so it is roughly 2/3 of the way full then sprinkle the tops of muffin batter with the streusel topping.
  6. Bake muffins for about 18-20 minutes or until the tops of muffins spring gently back when pressed on with your finger or a toothpick can be inserted and come out clean.
  7. Remove muffins from oven and enjoy!
