I crave this wineless shrimp scampi recipe and luckily it’s quick and easy to make. It’s perfect for a busy weeknight! The shrimp is plump and flavorful and the noodles are bathed in a buttery garlic and lemon sauce.

I love to add some herbs to this recipe to give it some dimension and of course If you love spice you can easily make this a spicy shrimp scampi, be aware that the red pepper flakes go a long way!

You can use any pasta in this recipe but typically you would use a thinner noodle like angel hair or spaghetti. I have used fettuccini in the recipe pictured and it tastes just as delicious!

This recipes also reheats well. I love a good leftover! Although be warned that if you are reheating at work, your co-workers may not appreciate the smell of shrimp floating through the office. Ha ha!

Serves 4-6
- 1 pound pasta – angel hair, spaghetti or fettuccini
- 8 cloves garlic – minced
- 2 tablespoons salted butter
- 2 tablespoons olive oil
- 2 pounds shrimp – peeled and deveined
- 1/2 cup chicken stock
- 2 tablespoons lemon juice
- zest of half a lemon (optional)
- pinch of salt
- pinch of black pepper
- 1 teaspoon Italian seasoning or pizza seasoning
- (optional) 1/4 teaspoon red pepper flakes
- Parmesan cheese for on top
Instructions
- Boil pasta in salted water according to package directions.
- In a large pan, add garlic with butter and olive oil.
- Add shrimp and sauté until shrimp is almost cooked through.
- Add chicken stock, lemon juice, lemon zest (optional), salt, black pepper, Italian seasoning and optional red pepper flakes.
- Add the pasta to the shrimp and sauce and mix it all together.
- Serve with parmesan cheese on top and enjoy!
