Grilled Steak and Nectarine Salad

I love this grilled steak and nectarine salad. It’s filling, fresh, flavorful, easy to make and delicious!

Nectarines are one of my favorite stone fruits and during the summer when they are perfectly ripe and juicy, they taste even better!

I love them in this salad because they add a juicy, fruity, slightly acidic and sweet bite to the salad. When that is combined with the smokiness from the grilled steak, the saltiness from the feta and the crunch of the crumbled croutons, it makes for a delicious combination.

I use a premade balsamic glaze for this recipe because it is so easy to use and convenient. I will however include how to make this if you want to make the glaze from scratch.

What you need to make this grilled steak and nectarine salad: (printable recipe below)

Serves 2

  • 6 ounce steak filet – cut of choice (I used sirloin in the salad pictured)
  • Sea salt
  • Black pepper
  • 4 cups spinach – chopped
  • 2 nectarines – pitted and sliced
  • 2 tablespoons feta crumbles
  • 10 croutons – chopped so they are mostly crumbs
  • ~4 tablespoons balsamic glaze – store bought or homemade (recipe for that below)

Instructions

  1. Season steak with sea salt and black pepper on both sides.
  2. Grill on 400 F. until desired doneness.
  3. Let steak rest, then slice thinly.
  4. Add chopped spinach to a plate or bowl, followed by a sliced nectarine, sliced steak, feta crumbles, chopped croutons and then top with balsamic glaze.
  5. Serve and enjoy!

Balsamic glaze recipe

  • 1/3 cup balsamic vinegar
  • 3 tablespoons sugar
  • pinch of salt and pepper – optional

Instructions

For the microwave;

  1. In a microwave safe bowl add all ingredients and stir together.
  2. Microwave for 1:30 minutes then stir. If mixture can coat the back of a spoon it is done, if it cannot, then microwave again in 30 second intervals until it can. The mixture will thicken more when it cools.
  3. Cool mixture before using.

To make on the stovetop;

  1. Add all ingredients to a sauce pan.
  2. Bring ingredients to a boil then reduce to a simmer for ~2 minutes or until mixture can coat the back of a spoon. The mixture will thicken more when it cools.
  3. Cool mixture before using.
