This instant pot cilantro lime rice is flavorful, delicious and easy to make! It’s my daughters favorite rice and gets so excited when I make it for her.
It goes great as a side dish as well as in burritos, tacos, bowls, etc.. It have it pictured on a burrito on this post.
My daughter loves to eat it plain and it’s a hit that way with all of my four kids as well.
This is as easy as instant pot recipes come, it’s a dump and cook recipe and that makes it perfect for a weeknight. Especially if you are preparing other dishes to go along with the meal, it’s a perfect time saver!
This recipe easily feeds a family or group of 6 to 10. I have 6 in my family, 2 adults and 4 children and this recipe makes enough for all of us to have it for 2 meals. Leftovers store easily in the refrigerator for a week.

What you need to make this instant pot cilantro lime rice: (printable recipe below)
Serves 6 to 10
- 3 cups dry white rice
- 32 ounces chicken stock
- 1 1/2 cups water
- 1 cup cilantro – diced
- 1/4 cup lime juice – Add more if you like more tang in your rice
- 1 1/2 teaspoons salt
- 4 tablespoons salted butter
- 1 teaspoon garlic powder
Instructions
- Add the rice, chicken stock, water, cilantro, lime juice, salt, butter and garlic powder to the instant pot and cook on the rice setting with a quick or natural release (it works with both).
- Once pressure is released, loosen and mix rice up with a fork then serve and enjoy.
