These healthy Samoas energy balls taste like a Samoas girls scout cookie! If I am being honest I actually like them better than the girls scout cookie classic and I love the girls scout classic cookie version.

These are made using dates as the base so they get that delicious date chew and flavor. I think the flavor of dates tastes like the caramel and vanilla shortbread of a traditional Samoas girls scout cookie.

I added some almond flour to give these some substance, protein and healthy fats. It also makes them feel a little more cookie like.

I added cacao powder, you can also use cocoa powder, to these for the chocolate drizzle taste, it’s not overpowering and still allows the caramelly – date – cookie flavor to come through.
The coconut that gets mixed into the balls and then rolled on the outsides gives these the signature coconut texture and taste.

Of course I added a generous pinch of sea salt to amplify the flavors of these healthy Samoas energy balls.

These can be made in a food processor or blender and come together super quickly. Store the leftovers in the refrigerator door for a quick, yummy and guilt free snack that I hope you love as much as me.
What you need to make these healthy Samoas energy balls: (printable recipe below)
Makes 12 energy balls
- 1 cup dates – pits removed and cup packed full
- 1 cup almond flour
- 1 teaspoon coconut oil – melted
- 1 teaspoon honey
- generous pinch of salt or ~1/4 a teaspoon
- 2 tablespoons cacao powder – cocoa powder also works
- 1 cup shredded coconut – sweetened or unsweetened both work – divided
- 1 teaspoon vanilla extract
- 2 tablespoons water
Instructions
- In a food processor or blender, add dates, almond flour, coconut oil, honey, salt, cacao powder, 1/2 of the shredded coconut, vanilla and water and pulse until the dates are chopped up and everything is well combined.
- Remove from food processor or blender and place on a sheet of parchment paper.
- Roll into 12 individual balls and roll in the remaining shredded coconut.
- Enjoy and keep leftovers in the refrigerator.
