This pear chicken and bleu cheese salad is fresh, sophisticated, simple to make and delicious. The dressing is a quick red wine vinaigrette that compliments the pears, chicken and cheese.
I like to use sliced chicken deli meat in this salad because it’s easy and convenient, however, you can also use roasted or shredded chicken or even roasted turkey breast in this salad.
If preparing this salad ahead of time, you can add the pears last to prevent browning or dip them in citric acid, lemon juice or a vinegar infused water then gently pat dry. I personally don’t mind them turning brown but if presentation is important that will help.
This red wine vinaigrette is so simple to make, simply whisk together the ingredients and it’s ready to use, no need to heat and cool it. That makes it a major time saver!
What you need to make this pear, chicken and bleu cheese salad: (printable recipe below)
Serves 1 as a main entrée or 2-3 as a side
- 2 handfuls green leafy lettuce – chopped, romaine, butter, green or red leaf lettuce all work
- 1 handful arugula
- 1 pear – cored and sliced
- 2 tablespoons bleu cheese – crumbled
- 1/4 cup cooked chicken, chunked or sliced chicken deli meat
- 1 tablespoon chopped almonds – (optional)
Red wine vinaigrette:
- 2 teaspoons honey
- 1 tablespoon red wine vinegar
- 1 tablespoon avocado oil or grapeseed oil
- Pinch of salt and black pepper – I use fresh cracked black pepper
Instructions
- Add lettuce, arugula, sliced pear, bleu cheese crumbles, cooked chicken and chopped almond to a salad bowl.
- Whisk together the honey, red wine vinegar, avocado or other flavor neutral oil, salt and black pepper.
