This sausage and mushroom pappardelle is a delicious and hearty pasta dish! The thick pappardelle pasta can hold up against the hearty sausage, tomato and mushroom sauce. It’s pasta comfort food at it’s best.
This dish is also really quick and easy to make and perfect for a weeknight dinner but also feels fancy enough for a entertaining dinner with friends.
I like to mince my mushrooms small because I am the only mushroom lover in my house so if they are small the family doesn’t even know they are there giving this dish it’s delicious flavor. You can however slice them large or even keep them whole in this recipe if desired.

- 8 ounces pappardelle pasta
- 1 small onion – diced
- 2 tablespoons olive oil
- 1 1/2 cups chopped mushrooms – white or cremini, chopped
- 7 cloves garlic – diced
- generous pinch of salt
- dash black pepper
- 1/2 teaspoon dried Italian herbs
- 1 pound ground sausage – regular, Italian or spicy
- 14-15 ounce can chopped tomatoes
- 1/2 cup pasta water
- 1/4 cup cream
- 1/2 cup grated or shredded parmesan cheese – more for on top
Instructions
- Cook pappardelle pasta in salted water according to package directions, reserve 1/2 cup pasta water and drain remaining liquid.
- While pasta is cooking, In a large skillet, add onion, olive oil, mushrooms, garlic, salt, pepper and Italian herbs and cook until onions begin to soften.
- Add ground sausage and cook until sausage is browned.
- Add chopped tomatoes, pasta water, cream and grated parmesan and bring mixture to a boil then reduce to a simmer.
- Add pasta into sauce and stir over low heat until all of the pasta is coated.
- Season with additional salt if desired then top with extra parmesan cheese and enjoy.
