This stuffed delicata squash is hearty, yet healthy and so delicious! It’s stuffed with rice, sundried tomatoes and chopped chicken.
It’s simple to make and fun to eat because you can just pick up the whole piece of squash and take a bite! I love that you can eat the outside rind of delicata squash.
This recipe does not require you to make the filling in the center, instead you will roast the delicata squash and then placed the warmed filling in the center and then enjoy. This make this recipe cook quicker and keeps the rice filling nice and tender.
What you need to make this stuffed delicata squash:
Serves 2
- 1 large delicata squash or 2 small – cut in half lengthwise, seeds removed
- olive oil
- salt and pepper
For the filling:
- 1 teaspoon olive oil
- 1/4 cup red onion diced
- 2 cups cooked rice
- 1 cup cooked chicken – diced
- 3 tablespoons sundried tomatoes – chopped
- 1 teaspoon dried parsley
- 1/2 teaspoon salt – more to taste
- 1/4 cup Italian salad dressing
- 1/4 cup parmesan cheese – optional
Instructions
- Preheat oven to 400 F.
- Spray or rub the cut and deseeded delicata squash with olive oil then sprinkle with salt and pepper.
- Bake on a lined cookie sheet for 30-35 minutes or until squash is tender.
- While squash is baking, cook rice and prepare all other ingredients.
- In a pan, over medium heat, add olive oil and diced red onions and sauté until onions are softened.
- Add rice, cooked chicken, sundried tomatoes, dried parsley, salt, Italian salad dressing and parmesan cheese (if using) to pan with red onions and stir together until everything is warm and blended together.
- When Squash is done baking, spoon filling mixture into the squash and enjoy!
