These browned butter no bake cookies are insanely delicious! They are soft and chewy with rich flavors from browned butter, cinnamon and optional pecans.
When I set out to make a recipe I go into the process with an expectation of creating something tasty and I work my magic to make it deliver on that objective. However, sometimes a recipe just comes together and blows my own socks off at how yummy it turns out, these cookies are that kind of recipe. Easy to make and magic on their own.
No bakes are so easy to make and I love them! I love the traditional peanut butter and chocolate variation! This version holds it’s own against even the original, which is saying something! HERE is my original extra chewy no bake cookie recipe.
What you need to make these browned butter no bake cookies:
Makes 10 large cookies
- 1/4 cup salted butter
- 1 cup brown sugar
- 1/2 cup corn syrup
- 1/2 cup water
- 1 teaspoon cinnamon
- 1/2 teaspoon salt
- 2 1/2 cups quick oats
- 1/4 cup pecans – optional
- Salt to sprinkle on top
Instructions
- In a large pan, add butter and melt on medium heat until it begins to get golden and brown slightly.
- Add the brown sugar, corn syrup, water, cinnamon and salt and bring mixture to a simmer.
- When the brown sugar dissolves and the mixture thickens slightly, add the quick oats and pecans (if using) and stir until all the oats are coated.
- Spoon mixture into individual cookies on a piece of parchment paper, sprinkle the tops with salt.
- Allow to cool completely before enjoying.
