Instant Pot Tomatillo Pork

This instant pot tomatillo pork is a delicious and quick way to enjoy a pork roast. The instant pot cuts the time down drastically from a 8-9 hour cooking time to about 40 minutes of high pressure time.

This tomatillo pork is perfect or tacos, burritos, salads, nachos, on it’s own or however you want to eat it. It’s just a touch spicy and deliciously savory.

What you need to make this instant pot tomatillo pork:

Makes 2 1/2 pound pork

  • 2 1/2 pound pork picnic, butt or shoulder roast
  • 1/4 teaspoon black pepper
  • 1 teaspoon salt
  • 1/4 teaspoon celery salt
  • 1/2 teaspoon chili powder
  • 8 ounces green chilies
  • 16 ounces tomatillo salsa or salsa verde
  • 1 teaspoon garlic powder
  • 1 tablespoon sugar

Instructions

  1. Place pork roast into instant pot with black pepper, salt, celery salt, chili powder, green chilies, tomatillo salsa, garlic powder and sugar.
  2. Cook on high pressure for 40 minutes with a quick pressure release.
  3. Once instant pot is open, shred pork with a fork or use a standing mixer with a paddle or dough hook with the sauce that it is cooked in.
  4. Serve with sauce from cooking and enjoy.
