This apple chicken salad is a delicious and easy lunch or dinner. It’s filled with apples, chicken, celery and green onions. This is super easy to throw together!
This chicken salad is perfect for meal prepping too, you can make it on a Monday and eat it for the next 3-4 days. I love using rotisserie chicken, canned chicken or any chicken leftovers that you may have.
You can use any apples for this recipe, I have made it with all kinds. This salad can be served in a wrap, sandwich, croissant, with crackers, in lettuce cups or just on it’s own.
What you need to make apple chicken salad:
Serves 4
- 1/2 cup celery – diced
- 1 apple -core removed, diced
- 2 green onions – diced
- 2 cups cooked chicken breast – diced or shredded
- dash paprika
- 1/2 teaspoon black pepper
- generous pinch of salt
- 1/2 teaspoon sugar
- 5 tablespoons mayo
- 2 tablespoons white vinegar
Instructions
- Add all ingredients together in a bowl and mix well.
- Serve in a wrap, croissant, sandwich, with crackers, in lettuce cups, etc.
