Bleu Cheese Bison Burgers

These bleu cheese bison burgers are delicious! I love ground bison burgers and these have bleu cheese mixed into the burgers so you get lovely little pops of blue cheese flavor in every bite but it doesn’t over power the bison. Restraint is needed when you are adding bleu cheese to a burger but these burgers have a good ratio.

I love to top these bleu cheese bison burgers with grilled mushrooms, French fried onions and fresh tomato. I call it my red, white and bleu burger because of the combo. I also love them during the summer and they are the perfect 4th of July burger!

This bison burger stays super moist and tender when grilled up and it doesn’t need a binder to keep the meet together. You don’t need a burger press but can definitely use one if you have one. I just roll the meat mixture into a ball them press down firmly and round out the edges.

These burgers are great on the grill or pellet grill or they can be fried up in a pan too. the bleu cheese will melt a little when cooked but it mostly stays with the burger. If cooking in a pan, plan on some cheese melting onto the pan.

What you need to make bleu cheese bison burgers: (printable recipe is below)

Makes 4 – 1/4 pound burgers

  • 1 pound of ground bison (16 ounces)
  • 1/2 teaspoons salt – you can season with more salt after the burger is formed if desired
  • 3 tablespoons bleu cheese crumbles
  • Dash of cayenne pepper – be generous if you want some heat
  • 1/4 teaspoons finely ground black pepper
  • 1 teaspoon hot sauce – this just adds flavor, not spice, add more if you want more spice

Optional toppings for the burger:

  • Grilled white mushrooms – ~2 cups sliced before cooking
  • 1 tomato – sliced
  • 1/2 cup French fried onions
  • 1/4 red onion – sliced and cooked
  • Lettuce of choice – roughly 1 cup
  • Mayo, ketchup, mustard, BBQ sauce

Instructions

  1. Heat grill up to 400 F.
  2. In a bowl, add ground bison, salt, bleu cheese, cayenne pepper, black pepper and hot sauce and mix together well.
  3. Divide into 4 portions, roll each portion into a ball and then press firmly down so a burger patty forms, round the edges if you need to.
  4. Cook burgers on grill or in a frying pan until they are at your desired doneness.
  5. Add to a bun with sauces of choice and toppings of choice.
  6. Enjoy! (most important step)
