Middle Eastern Cauliflower Salad

This middle eastern cauliflower salad is inspired by a tabbouleh salad but it differs enough from the original that I wanted to name it something different. The differences in the salad are the use of cauliflower rice instead of bulgur, the addition of Za’atar seasoning and optional feta. The flavors of parsley and mint are still present with a lemon and olive oil dressing.

This salad is fresh and delicious and I love every bite! It is perfect for a hot summer day and a perfect no cooking dinner option!

The cauliflower rice that is used is quick and easy to make, I just buy the frozen version and microwave it in the bag. I then let it cool before adding it to the salad.

This salad has a simple dressing of fresh lemon juice and olive oil. It’s fresh and delicious with the seasoning and flavors from the salad. This dish makes a great main course or a perfect side dish too.

What you need to make this middle eastern cauliflower salad:

  • 1/4 cup red onion – finely diced
  • 1 cup cauliflower rice – cooked and cooled
  • 1 teaspoon Za’atar seasoning
  • 1 tablespoons dried parsley or 1/4 cup fresh parsley – chopped
  • 5 fresh mint leaves – minced
  • pinch of salt
  • juice of 1 lemon
  • 3 tablespoons olive oil
  • 1/4 cup feta – optional
  • 1/4 cup Pomegranate seeds – optional

Instructions

  1. In a large salad bowl, add red onion, cauliflower rice, Za’atar seasoning, parsley, mint and salt.
  2. Squeeze the lemon over the salad and add the olive oil, stir well.
  3. Add feta and pomegranate seeds if using and enjoy!
